This is the Best Sugar Free Keto Almond Brittle recipe we have found and is not too sweet, unlike the normal Nut Brittles can be.
We found a few recipes online but none of them were exactly what we wanted. So we massaged and hacked the various recipes until we came up with this Keto, low carb and sugar free nut brittle candy and we are very pleased with the outcome.
The Almond nut Brittle Candy is crunchy just like a normal sugar based Almond Brittle candy and it has a slight cooling sensation to your mouth after you eat it, because of the Monk Fruit/Erythritol.
If it wasn’t for the cooling sensation you would suspect this wasn’t truly keto, but this candy is made with only healthy keto ingredients (see list and recipe below).
You don’t have to worry about your sugar count because our Best Keto Almond Brittle Candy is sweetened with organic Monkfruit, so its safe for your Keto, low carb and diabetic requirements.

Best Keto Almond Brittle Candy recipe 0.6g net carbs
Ingredients
- 113 grams unsalted butter Don't skimp on the quality of butter. It makes a huge difference in the taste of the end product.
- 6 tbsp Organic Monkfruit You can use Erythritol as well but cooking times may be different.
- 1 tsp pure organic vanilla extract
- 1 cup Almond Nuts You can substitue any nuts you would like. It is better if they are toasted though. If they are not toasted, the end product can turn out a bit chewy rather than brittle.
Instructions
- Chop the whole almond nuts1 cup Almond Nuts
- Choose your mold for your candy and prepare by placing the chopped nuts into your mold, evenly disbursed throughout your molds. We prefer Silicone as it is easy to remove the candy once it is set.
- In a clean cooking pan, put the butter in the cooking pan and turn on the fire into low flame.113 grams unsalted butter
- When the butter starts melting start a twenty minute timer and put the sweetener you use in and stir it.6 tbsp Organic Monkfruit
- Right before timer ends (last minute or so), add the vanilla, while still stirring.1 tsp pure organic vanilla extract
- Keep mixing the butter with the sweetener. Don't stop mixing it until the timer ends.
- Carefully pour the sweetener/butter/vanilla you cooked into the molds over the Almonds.
- Let it cool for 20min.
- Remove from molds and store in air tight container at room temperature.
